200g Romanita Tomatoes
250g Feta Cheese
1 Sheet Puff Pastry
2 Large Onions
100g Denova oil
20g Lemon Juice
*Preheat oven to 160C.Prepare your Tomatoes in a roasting tray. Toss the Tomatoes with Denova oil and roast until Blistered. Add salt and pepper to taste.
*Crumble your Feta Cheese and put aside.
*Prepare your Rocket wash if necessary.
*Make Avocado spread, add your Avocado, Plain Yogurt and lemon juice in a blender and blend everything until smooth season with salt and put aside.
*Caramelise onions and peppers, sweeten with sugar and cook until ready.
*Make balsamic reduction heat the balsamic with sugar over low heat, cook until starts to coat the back of the spoon and remove from the heat.
*Bake 1 whole sheet of the Puff Pastry at 160C. Press the Pastry flat with another tray after removing from the oven (if puffed too much).
For the Chimichurri:
10g Cilantro Leaves
100g Denova Oil
2 Cloves Garlic
60ml Almond flakes
*Make Chimichurri with half of the Cilantro Leaves, Denova Oil, Crushed Garlic, Toasted Almond Flakes. Mix everything and crush using a Pestle.
To assemble your salad:
Final step start assembling your pizza. Use the Pastry as your base (same concept with normal pizza) and follow with the Avo spread and other prepared ingredients. Use reserved Cilantro leaves to garnish the pizza and finish with Denova oil and chimichurri on top.
Serve at your next Braai.
